Honey Sponge Cake with Creamy Honey & Passionfruit
This recipe is a delightful twist on a classic family favourite, inspired by Jodie's Great Aunt's Honey Sponge Roll. Traditionally, this sponge cake was rolled up with a light whipped cream filling, perfect for sharing with beekeepers during a visit to their hives. This version elevates the humble sponge into a stunning cake topped with our newest Bee Creamy Honey & Passionfruit.
Ingredients
- 4 eggs
- 1/3 cup caster sugar
- 1/2 cup cornflour
- 2 tbsp plain flour
- 1 tsp baking powder
- 1 tsp mixed spice
- 1/2 tsp cinnamon
- 2 tbsp Beechworth Honey (warmed)
- 500 ml thickened cream
- 1 tsp vanilla essence
- 300 g Bee Creamy Honey & Passionfruit
- 3 passionfruits (pulp)
Instructions
- Preheat oven to 170°C.
- Using an electric mixer, beat the egg whites until firm peaks form.
- Add the caster sugar and beat until sugar dissolves. Beat in egg yolks. Sift the cornflour, plain flour, baking powder, and spices three times. Use a metal spoon to fold flour into the egg mixture.
- Fold the warmed honey gently into the mixture.
- Divide the batter evenly into the prepared cake tins. Bake for 20 minutes or until the cake has risen, turned golden and springs back when gently touched. Run a knife around the edge of the cake and release the springform tin. Immediately turn the cake out onto a cooling rack. Allow it to cool.
- While the cake is cooling, whip the cream. Add the cream to a large bowl with the vanilla essence and whip on high speed until it forms stiff peaks.
- Once the cake is cooled completely, spread a generous layer of Bee Creamy Honey & Passionfruit and then a thick layer of whipped cream. Stack the second cake on top and repeat with another layer of honey and whipped cream. Top with fresh passionfruit pulp before serving.
