Honey, Strawberry & Thyme Syrup
Nature’s very own cordial tastes as incredible as it looks! There is something so special about entertaining friends and family, a time to come together and conversation and delicious food. Take your party drinks to the next level with this stunning strawberry, thyme and honey syrup. Get creative and swap in any of your favourite fruits, herbs and aromatics.
Ingredients
- 1/2 cup honey
- 2 cups strawberries (roughly chopped)
- 1 1/2 cups water
- 1 handful fresh thyme
Instructions
- Combine the strawberries, thyme, honey, and water in a saucepan.
- Bring to a boil over medium-high heat. Reduce the heat and continue to cook gently for 20 mintues. The mixture will thicken and deepen incolour. Make sure you stir every so often so the mixture doesn't catch on the bottom of the pan.
- You want the mixture to be thin enough to pour easily.
- Remove from the stove and strain mixture through a mesh sieve into a 500ml jar or bottle (you should have approxmiately 500ml of syrup).
- Once cooled, pop it in the fridge.
- Serve over ice and top with sparkling water.
Notes
This is also a wonderful base for cocktails - simply add two tablespoon of the syrup to a glass and top with Prosecco or sparkling wine, or even a splash of gin and soda over lots of ice.Â
It's is important to store this mixture in the fridge and use within two weeks. If left out, it will begin to ferment.
