Honey & Zucchini Refrigerator Pickles

Ingredients
- 1 cup warm water
- 2 tbsp salt
- 2 zucchinis
- 1 brown onion
- 1 1/2 cups apple cider vinegar
- 1 cup Bee Cause Bush Honey
- 1 1/2 tsp mustard powder
- 1 1/2 tsp yellow mustard seeds
- 3/4 tsp turmeric powder
- 1/2 tsp chili flakes
Instructions
- In a bowl, dissolve the salt in warm water. Add the sliced zucchini and onions, and let them soak for 1 hour. This ensures the pickles will stay crisp over time.
- While the vegetables are soaking make the pickling liquid by combining the honey, apple cider vinegar, mustard powder, mustard seeds, turmeric, and chilli flakes in a small saucepan. Simmer on medium heat until the liquid has warmed and the honey has melted. Remove from the heat and set aside.
- Drain the zucchini and onions and divide them evenly between jars.
- Pour the pickling liquid into the jars, ensuring the vegetables are completely submerged.
- Seal the jars tightly with their lids and refrigerate for at least 24 hours before serving. These pickles can be stored in the fridge for up to a month.
