Raw Honey
We believe that the honey in your jar should be a reflection of the land it came from. Australia’s incredible variety and quality of honey is something to be celebrated. The best way to do so is to ensure we treat honey with care and respect.
There are a variety of definitions and interpretations of what raw honey is, but at Beechworth Honey, we define raw honey as not being pasteurised or heated to high temperatures with no ultrafiltration. It is honey that has had minimal processing.
Beechworth Honey is strained to remove wax and hive debris only, with all natural pollens retained, a gentle way to filter the honey. It is gently warmed just enough to allow it to flow easily into jars through a wide strainer – which allows the honey to retain the natural enzymes, flavours and aromas.
Most of our honey will eventually crystallise as a result of retaining these natural pollens. Most honeys will crystallise with time and the presence of crystallisation is a natural indicator of raw honey.
If you are located in Western Australia, you will not be able to purchase Beechworth Honey, Due to domestic quarantine restrictions WA where it is a legal requirement if the honey is produced outside of WA, it must be pasteurised.
