Alpine Ash Honey is a deep amber in colour and has a strong, bitey aftertaste. It has unique eucalyptus and medicinal flavours and is perfect for those that like strong, bold styles of honey. Very slow to crystallise.
Botanical Information
Alpine Ash is a species of eucalypt that can grow from 50 metres and occasionally up to 90 metres tall. This majestic tree produces both nectar and pollen. Interestingly it only produces significant honey around once a decade, which is a reflection of how infrequently this tree flowers.
Alpine Ash trees have a long straight trunk with stringy fibrous bark around the base and white smooth bark above. Alpine Ash flowers between December and March. Source: Flora of Victoria, Royal Botanic Gardens.
Geographical Information
Alpine Ash grows along the Great Dividing Range, in cool mountainous regions and is often found just below the snow line. It prefers deep soils on steep slopes.
