Ironbark Honey is extra light amber to pale amber and is one of the most popular honeys in our varietal range. It is delicate and very sweet with aromas of fresh beeswax. It has buttery, creamy flavours with very little aftertaste. The is a lovely liquid honey that can crystallise quicky…if it lasts that long!
Botanical Information
Ironbarks are members of the Myrtaceae family of eucalypts. There are many species of Ironbark, all sharing deep furrowed dark grey bark.
Geographical Information
A characteristic Ironbark quality is their ability to grow tall and slender in poor soils with little rainfall. Ironbarks are known by beekeepers as “short budders” because they only set their buds about three to six months before flowering. Beekeepers often watch for ironbarks to bud in mid summer after good winter rains for flowering in the autumn or winter.
